Dreams can occur in REM or near the beginning of sleep ( Non-REM sleep) Non-REM dreams can be controlled much easier then REM. In REM the body goes through REM atonia, turning off muscle movements. If you have a vivid dream late in the night you were probably in REM.

Usually if you have a normal sleeping schedule, you'll wake up in the middle of the morning, or night, then when you fall back asleep r.e.m will start. For a lot of people it's usually around 5 hours after they fall asleep.

A good point that is not made often enough. You can dream in nREM, but the dream may lack much in the way of DCs and randomness, it also is going to tend to be less vivid. Aim at around 5ish hours sleep, but it varies. Experiment with waking to an alarm. If you wake from a vivid or intense dream, you probably woke from REM.

Edit: I also agree that they are easier to control, because fewer stupid random things pop up.
