    Noodles

    Does anyone know how to keep homemade noodles from turning into tagliatelle pasta?

    Let me explain,

    I make them from scratch, I slice them into really thin strips. Yet when it comes to boiling them, they increase in size and basically turns into tagliatelle strips.

    Before you ask, I use plain flour and not self-raising flour.

    What am I doing wrong?

    I don't know much about noodles, but I do remember that we had to let them dry out for a day or two before cooking them. Also, I'm fairly certain that you bring the water to a roiling boil before adding the noodles.

    But like I said, I'm no expert. I don't even know what tagliatelle is. Sorry.

    Hmm...that would probably be what I'm doing wrong. I always stick the noodles in the water and then I bring it all to the boil. This is probably why the noodles would increase in size as it allows them more time to be heated and absorb more water. Huh! Some cook I am *face palm*


    Thank you! I'll definitely bring the water to the boil first and then add them.
