We don't recall as many dreams in the middle of the night because when you first fall asleep, you spend most of your time in non-REM sleep and just a little in REM (when you're dreaming), but as the night goes on, nREM gets shorter and REM gets longer. I haven't put forth as much effort as I could to recall my dreams (though I did have a pretty good one last night where I was singing and felt so alive with the song), but if you want to recall more, I'd suggest writing your dreams down when you wake up through the night. You don't necessarily have to write down every minute detail, but at least jot down the main points of the dream.
We naturally wake up multiple times each night, though usually we just fall back asleep. You could set your alarm to wake you up (about 4-6 hours after going to bed) or if you can remember to write down your dream when you wake up, that's fine. It may take some practice but it does go a long way in helping you increase your recall.
