Why do I think about this one so much?

Usually, I don't really think too much about dreams I had. Many of them are lucid, but not all. Out of the ones that aren't, I certainly do make some thoughts to a certain extent, but not for very long. This time, it's different and I don't know why, it didn't appear to be a special dream of any kind, but nevertheless.. oh well, let me just
write it down.
I remember walking up a hill in a field of grass with a dark green checkered bathing towel (and a backpack, if I'm not mistaken). There are other people as well, but I went alone, simply wearing swimming trunks. Behind the hill is either a swimming pool or a small pond. I never see it in the dream, but I know it's there and the water in it is crystal clear and even a bit cold, refreshing.
In real life, there is this girl I have a crush on. In the dream I'm waiting for her to arrive. She seems to be late. A few moments after I settled down on my towel, two guys
(young adults, about 18-20 I guess) put their towels down pretty close to me, about 2 metres I guess, even though there's plenty of free space available everywhere.
I don't know them in real life.
Soon after that, she arrives, only wearing a bikini, carrying a handbag and a towel. She greets me and puts her towel down in front of me and sits down, facing me. I notice there's an apple (bitten) lying on my towel, but I don't mention it. I don't know if it has been there all the time or if she brought it. I noticed the two guys looking at us shortly
when she was settling down, but afterwards I can't recall them being there anymore for the rest of the dream.
First thing she says after sitting down is something like: "Good thing I was late. Otherwise we'd have been making out all this time." I know she doesn't mean it in a bad way, more like "it would have been awkward doing so around all these people". That was the first time I could've realized it was a dream, but I didn't. I remember the explanation in my head: "Wow, she hid her feelings all these years and now she's trying a direct attempt". We talk some more, but not much and I don't quite remember what about.
At some point, when I'm sitting left to her and start holding her around the stomach with my right arm. I remember her skin being extremely soft and smooth and I loved the feeling. She starts to hug me with both arms, rests her head against my arm and says: "I'm so glad that we're finally together (=a couple)". I don't know what to answer, so I just sit there, holding her, my mouth open. I don't know if I said something, because soon after, my alarm clock woke me up.
This was the second time I could've concluded it was a dream, because I knew what she said had no context. Even in the dream, I knew we had never kissed or had anything that could be described as even close to a relationship (other than being good friends, that is). So why would she say that? But I didn't question the reality of the situation in the short time that remained until I woke up.
I normally don't ask about dream interpretation, but this time something just boulders me. I remember reading somewhere that dreams often use a very symbolic language, and often they aren't about the topics they first appear to be (as a stupid example, if you want to know something about the sun in real life and you have a dream about it, it is very unlikely that the sun itself will actually appear in that dream), is that true? If so, I wonder what you people can see in the dream above. May there be something else in it, other than "simply" love? Just wondering if anyone can see something, I really have no idea why I think about this one so much!
PS: To answer a question beforehand, yes, I have dreamt of her before. Quite a few times, both in lucid and non-lucid dreams. Most of them were good, only a few were like
nightmares.
