Ok I see tons of books out there that are supposed to interpret your dreams, but telling you about key things. Life for example if you see a waterfall is supposed to mean something. How are these created? Is there real truth behind such symbols, and how do they figure these things out?

      or is it all poppycock?

In all honesty, that's MY interpretation of those types of books. I've had a couple over the years and it's like they just make it up as they go. I've since gotten rid of them. I think the best person to interpret your dreams is yourself. There are some dreamsigns that may have similar meanings to people, but I don't buy the crap that is in these "interpretation" books - like trying to predict your future. Like, oh you dreamed about a horse? In 3 days, you will be betrayed by a friend. come on...
