Taking some time to relax before you go to bed is the best thing you could do for yourself. If you need to make a list of what you need to remember for tomorrow, do so, but once that's done, don't allow yourself to worry about what's coming up. Stress will make your sleep more fitful, and you'll be less likely to recall anything.
In the morning, if you don't have time to write out every detail, just write out a summary or bullet points with the most important events/characters. Then later on, if you do have time to write in the details, you can go back and just fill in the blanks. Recall will get easier in time if you just keep practicing. If you can try to not move when you first wake up (any more than you have to to turn an alarm off or so), just lay there for a minute or two and recall what just happened before writing it down. It may take a little while to get into the habit, but you'll get it eventually.
Best of luck. I hope that your life becomes a little less stressful soon so you can continue to enjoy your dreams.
