The Song of the Count was awesome. However I'm slightly worried as to whether the Count was intentionally portrayed as a Jewish stereotype...
Always loved that Count Song. But now that you mention Goldney, you might be right there...

But here is one thing, the count likes to count, whatever it is he is counting, it isn't just money, so that stereotype should be thrown out of the possible
The counts nose might be big, but remember, muppets and puppets and etc. are all meant to have embellished characteristics.
As for his voice...I can't say much about it. His voice may have changed many times throughout the puppets career.
