      Vegetarian Recipes?

      I'm a vegetarian, and i'm looking for some good recipes. Anyone know any? Thanks!

      I can't give you exact measurements for anything, but here goes:

      Tortilla soup:
      Black beans
      Corn
      Rice
      Tomato sauce/paste
      Vegetable broth (either homemade with vegetables that you wouldn't neccessarily want to eat as is but are still technically edible, or storebought broth)
      and pretty much any other seasoning you think would be good.

      Also take a chicken enchilada recipe, and just substitute the chicken for beans, and the chicken broth for veggie broth. IMO it tastes better that way anyway

      Also couscous is good, there's a lot of things you can do with that. One of my favorites was just making couscous and adding chopped up cucumber, onion, garlic, cilantro, tomato, carrots, and some lime juice and some other seasonings. Good cold or warm.

      Pretty much I've found that if there's any recipe that involves meat, there's usually some sort of vegetarian substitute thats as good if not better. Trying to figure out how to make my own veggie burgers though... Not sure how to make them not fall apart. lol

      Vegan chocolate chip cookies:

      2 sticks margarine
      3/4 cup splenda
      3/4 cup brown splenda

      3 teaspoons of egg replacer
      4 table spoons of water
      1 teaspoon vanilla

      2 1/4 cups flour
      1 teaspoon of iodized salt
      1 teaspoon of baking soda

      Bake at 375.

      You need to use a binder.

      If you eat eggs, then those would work.

      If you don't, there's a little trick:
      Just use 2spoons (soy-)flour and 1spoon Water.
      Maybe add a little oil and salt, but it's not neccessary.

      If they fall apart in the frying pan, then you should brush the outside
      with a little bit of oil so they don't stick to the the bottom of it.

      You could also buy a special binder in probably any grocery store or
      health food shop. Those would be made for these kind of things, too,
      but aren't neccessary.

      Well, For me
      Breakfast: Whole grain cereal with rice milk, toast, and a protein shake.
      Lunch: sandwich with cheese, whole wheat bread, sprouts, tomato, lettuce, onion and avocado. Serve with corn chips .
      Dinner: Tomato cups stuffed with broccoli served on a bed of qunioa with slivered almonds. Serve with a side of rice and beans and corn bread. Sprinkle a little of the protein powder and nutritional yeast on your rice and beans.

      Swiss oatmeal. Simple, delicious, and healthy. Great for breakfast.

      Simply mix the following in a bowl:
      --Vanilla Yogurt
      --Oats
      --Fresh or frozen blueberries
      --Walnuts

      It should be mostly yogurt and oats, with enough blueberries and walnuts to keep things interesting. It will look something like this:


      Optional variations:
      --Add a bit of milk if you like it a little thinner.
      --Instead of only oats, try mixing half oats and half "grape-nuts" cereal (this is how I typically make it)

      I like lentil burgers, personally. They tend to stick together fairly well. I don't really have a recipe though, I just use whatever's in the house.

      Lentils
      Salt
      Pepper
      Carrot
      Onion
      Breadcrumbs
      Oats

      I pick up a half-eaten copy of a book by Neil Gaiman, and decide this is all his fault.

      2 cans of black beans (blend one can, and mash the other with the oats and spices)
      1-3 T greek yogurt. Or mayo. Or an egg white.
      1 c oats

      Then, you know, a bit of cilantro, garlic, and spices (cumin, cayenne, etc). Cooked on pam or some olive oil. Makes 6-8 patties.

      Also add chipotle sauce. Nomnomnom
