My favorite is Vanilla Sky.

To be blunt, I don't think Fight club is about dreams at all. It's still a great movie, though.
And yeah, you should definitely check out Vanilla sky.

is shutter island considered a movie about dreams? it sure as hell involves dreams and is fucking awesome
Inception & The Science of Sleep (La Science des rêves.)
Only seen Inception and Shutter Island (if that one counts)
It's written by my all-time favourite director, Michel Gondry (who also directed Eternal Sunshine.)
He's known for doing his special effects on-set rather than in post-production, which gives the dream sequences a really interesting look.
It's multilingual so you have to read subtitles sometimes, but it's mostly in English.
