You can pick any sleep schedule(within reason) and have it work for you, but you need to be consistent and stick with it. Once you stick with that schedule for about a week or even less than that, your body will adjust and dream recall will become a lot more easier to do. No need to wake up two times during the night(that's actually not good for your sleep really), just wake up whenever you normally wake up. Then once you wake up, stay still and remember the dreams you had. Remember, keep your sleep schedule consistent and everything becomes easier. A consistent sleep schedule also helps with lucidity.
I for example go to bed at 9:30 pm every night and wake up at 5:30 the next morning. I do this every day Monday-Friday and it helps amazingly with recall.
