Dream world collapsing
Anyone else experienced this?
Closest I've come to a fully aware lucid dream happened a few weeks ago, I was in my grandparents house walking around when suddenly I realized the room layout didn't match up and I was lost. At this point became semi-lucid, ran out into the street.
When I got outside it was familiar but strange, thick fog everywhere and very dark. Was struggling to control dream at this point, couldn't walk or move, was on my knees. Then out of nowhere rioters flooded the street and began burning down all the houses etc, dream rapidly ended and I woke up.
Second time, more recently, was dreaming I was in a beautiful forest at night with friends, look up at the sky and the sun is in the night sky, along with stars etc and dark clouds. Become lucid at this point but straight away it starts to collapse again, sun begins to fall out of the sky and glows a weird colour, clouds begin to fall out of sky. I wake up.
Anyone know what this is about? Or how I "stabilize" upon reaching lucidity?

Once you become lucid the biggest thing to remember to do is to calm down. If you get too excited you will wake up. Then you want to stabilize the dream by preforming one of the many stabilization which include rubbing your hands, spinning, and focusing on your surroundings. The premise of this is to anchor yourself into the dream by focusing on all 5 of your senses and trying to become "in tune" with the dream. It's a lot like practicing ADA inside a dream.
The reason why your dreams "collapsed" as you said was because it was time for the dream to end. You didn't really specify anything that would make me think you became too excited, to it was probably just the end of your REM period. You can actually train yourself to recognize when a dream is ending and use that time to prepare yourself for a DEILD which is what I prefer to do. This way even if the dream does end you still have a good chance at getting lucid. Personally, my dreams just sort of fade out but it sounds like yours end more rapidly and violently which should make them more noticeable :)

My best guess is just that your brain is going "WHAT THE HECK!!!" Not understanding why a new and weird state of awareness is happening, it takes the safety approach of "Shut Eveything Down, Something is Wrong"
Given time you will adjust say after ten or more LDs. You may be able to get over it right away if (as dorky as it sounds) you tell yourself clearly as if teaching a child that you are trying to cause a new and strange type of dream to happen. Then as soon as you get lucid again I would say "This is it. This is what I have been trying to do." Then if you can pull that off, your dreaming brain will relax a tiny bit and give you a chance to prove nothing has gone wrong.

I can only echo what others have said... You probably need some more experience to familiarize yourself with this altered state, and you should also practice some dream stabilization techniques.

As sivason says,i believe after a while you brain will get used to the new awareness and be able to keep the dream going.

It's actually hard to keep your dream going when it's about to finish. Usually it finishes when you least expect it.
