So basically all I have been doing is writing down my dreams every night in my dream journal and also pinching myself (discretely) in real life anytime something stressful or weird happens, is this helping me gain awareness in my dreams so I can get Lucid? If not please teach me an easier technique thankyou!
You are doing it right, but you should pinch yourself even when everything seems completely normal, In a dream something weird may actually seem completely normal and you wouldn't think to do a reality check. Its also best to assume you're dreaming already, If your reality check fails it doesn't matter, just assure yourself it will work next time.
Maybe have more than 1 reality check, such as trying to levitate or looking at the time.
Thats a good start to getting your first lucid dream but if you don't get results within a few weeks doing this I would suggest throwing in a 'wake back to bed' and using a technique that you feel suits it'll fast track your progress because I know I did the same as you when I started and I still do reality checks but unless you are doing some sort of wake back to bed the results dry up real quick maybe try 'mild' or 'ssild' once you have your dream recall up and have a little better awareness during the day, and also do alot of reading about dream stabilzations because getting lucid is only the first step the next hurdle is staying lucid and prolonging the dream good luck!

Pinching yourself is a rather... cliche thing to do. I wouldn't call it the best RC, since most likely you wont be aware enough to feel the pain in the dream.
I would suggest the nose-plug RC, since that seems to work for the majority (>50%) of people. I just never found pinching to be effective. Also, Owl already told you about when to perform these.
It's more of an uphill climb from here, but then it plateaus off. Keep practicing and trying different methods and techniques.
