To answer your questions:
1. There are different opinions about the effectiveness of binaural beats. Quite a few claims by those who sell them, and mixed results by those who've tried them. Feel free to experiment and see if they work for you. You can use either headphones or earphones, with earphones possibly being more effective.
2. Start by making it a habit to write down your dreams every morning. It also helps to repeat to oneself before going to bed that you will remember your dreams the next morning.
