Lots of time you dream in black and white because your mind is tired and it's easy to render things in black and white than in full colour. Usually these black and white dreams happen early in your sleep, while REM cycles are shorter and not as powerful.
I only recall dreaming in black and white once actually and it was from what remember a themed dream. Almost like I was watching an old film. Everything about it was as such. Aesthetically, it was as if I was watching something filmed with a 8mm camera. I was just a kid and the dream had to do with my uncle that passed away back then. I don't claim to know much about dreams but I don't believe it was that way because I was tired and it occurred early in my sleep. There were a few other things going on as well back then that substantiate my belief that it was more then mere tiredness that caused the experience to be in black and white.
