I accidentally found out that if I press the option key and then any other key I get a symbol, but I can't figure out how to know which character go to which key. I can't find any list of it on the internet, I could go though them one by one, but is there a list somewhere? I checked google, apple, inquisiter...

Aye, if you were under Windows, it would be Alt+Number and there's an ASCII table in the Start menu.
As for Mac, here's a link to the Wikipedia about ASCII:

Should be some links at the bottom to an extended ASCII table with all the fun/funny symbols aside from the alphabet and punctuation.
I'm a programmer, I know the ASCII codes pretty much by heart. I'm talking about on the actual keyboard. Option + Z = "Ω", Shift + Option + Z = "¸" ... they don't seem to have a regular order.
I should have specified that this is a Mac, I thought PCs didn't have an option key (Mine doesn't.)
Apple used to provide a useful application called KeyCaps. It would show you a normal keyboard, but when you held down option, the keys would change into the special characters. Apple got rid of it after Mac OS X v10.2 (Jaguar), but a quick Google search indicates that it's still there, just relocated. Open System Preferences and click on International. Then click on the Input Menu tab, make sure the checkbox for Keyboard Viewer is selected, and check "Show input menu in menu bar" if it isn't already. You can quit System Preferences. Pull down the keyboard input menu, and click on Show Keyboard Viewer. Hold down option, and you'll see all the special character keys.
P.S. Next time, please let us know what OS you are using. Even if you thought it was obvious from your post that you were using Mac OS X, it would be nice to state that so as not to confuse the Windows users. Because Apple changes minor details from release to release, providing the version of Mac OS X (e.g. Jaguar, Panther, Tiger, or Leopard beta) would help us as well.
