When they say you only dream of what you've experienced, it doesn't mean you strictly dream about those you have gone through. It simply means that the content in your dreams is founded on everything you perceive through your senses. However, there is no limit as to how the brain can combine those different perceptions and come up with something new — be it objects, people, music, etc.
I've had an experience where I saw a completely new shade/hue of color, but then again, if it's something we've never perceived before and our brain constructed it, i think it will be really hard to identify it in the first place. The closest I can infer from that dream was that it was some kind of ultraviolet light or something. I can't even explain what it looks like, or how it felt, etc. because how exactly can someone explain something that he has never perceived before? All i know is that it was something i'd never seen before, and cant put words to. I personally believe that in dreams, it is indeed possible to see something our physical bodies cannot normally perceive due to certain limits—which our mind doesn
