I think most people don't count scene changes as separate dreams.
It varies a lot for me. Sometimes, I can wake up and remember a handful of dreams. Other times though, I can remember nothing, or very little of a dream. Usually those little things lead to other little things, which lead to some meduim sized things, but not all the time.
Edit: No, I wouldn't call a scene change a new dream. I have lots of different scene changes in my dreams, yet they all follow the same topic, or title to the dream.
I voted 1, but I was reading back through my dream journal this morning, and I had a few entries in there with 2-3 different dreams. I'm probably just on a dry spell right now.
I normally remember something like 5-8 dreams a night...but I only write down the lucids, because I'm lazy. The first 2-4 dreams are almost never worth remembering. They are disjointed memories from the previous day, or dreams of me watching TV or surfing the web or at work. They're also much shorter.
The ones after that tnd to be longer and more vivid. The nonlucids which are interesting I will write down, and the rest are usually lucid dreams, so I always record them. :)
For a while it's been out of whack but around 2 a night at the least if I tell myself to rememeber.
