In fact, the neutrino isn't even observed: scientists just assume it's there because of the mass and energy conservation principle. If something explodes and you can only see particles flying left, there must be something flying to the right.

Actually, the neutrino can be observed (and has been)... it is just really really hard to do so. You need very sensitive equipment in order to do so (and also negate any other potential radiation sources).
