Tell me about baking!

Right so, my therapist wants me to bake some chocolate chip cookies (long story). Just some normal chocolate chip cookies, but I plan on doing them from scratch. So tell me any sweet ways to make some normal chocolate chip cookies. I'll have to go out and get supplies since I don't already have the stuff to make it...so start listing your secret special ways to make cookies! (and other baked goods)

Follow the chocolate chip cookie recipe on the back of the back of chocolate chips. The big thing is just to make sure there aren't any clumps of dry ingredients in the batter, but you'll do fine. When baking, make sure the pan is sprayed well so the cookies actually come off. I find that spraying after every other pan works well. As Black Eagle said, measurements matter. Don't mix up a 1/4 cup with 1/2 cup or 1 teaspoon with 1 tablespoon. And I don't know if CCCs call for both baking soda and baking powder off of the top of my head, but just keep in mind that they are different, so if the recipe calls for different quantities, don't mix them up. Also, my mom and I tend to add a little more vanilla than it calls for, perhaps a teaspoon more. You can if you want, or not. It won't hurt anything. I have an unfortunate tendency where cookies like chocolate chip or oatmeal end up coming out flat. It's not really a problem as they end up tasting just as good, so if that happens, don't worry. Sift, sift, sift your flour and sugar! You don't want ANY lumps in any baked good, make sure to put the cookies on the MIDDLE rack if the recipe does not say another rack. try to learn the hows and whys behind every ingredient you don't know what it's there for. It will allow you to make your own recipes. also, check up on your cookies every now and then! your oven may not be right about the temperature that it is at and the cookies may get done before the recipe says they will in your oven, and you should wait a little bit before taking them off the baking pan to let them cool before you scoop them off or else they might tear. You might want a wire rack to cool them on too, because if you leave them on the pan they continue baking past perfection. hope this helps!
