Agreed on the sleep apnea. Worth checking out.

I'm sure nothing can match keeping a proper dream journal, but I'm lazy :-). I do my own thing and I think I get some of the same benefits. Maybe diarising is good if you're interested in particular dreams that stand out though.
I try to remember my dreams as I wake up (installing the intention as you go to sleep is obviously useful) and go through them, and the same thing if I wake up during the night.
Even if I think I've successfully remembered them, they can still fade quite easily. When I finally get up, I can remember that I was thinking about dreams, but not what I was actually remembering! So as I recall the dreams, I describe them, as if I was writing, typing, or talking, and it helps stop them fading. I think it helps provide an "anchor" for the dream memories, and they don't get washed away by the tide of wakefullness, or something like that :-).
Most recently, I've tried assigning numbers and titles to the dreams. I think most people will know what I mean by titles; they force you think about the dream and interpret it. Assigning numbers helps keep track, especially if you've got a lot of them; perhaps especially if you do it half way through the night, and then again in the morning.
