Okay, my suggestions would be this:
Firstly, don't put too much pressure on yourself, otherwise when you should be going to sleep, you are lying there worrying about going to sleep so you can dream. Just go to sleep! I find one thing that helps me go to sleep is a technique recommended in Stephen Laberge's book. You shut your eyes, become relaxed and then count 'one, i'm dreaming, two i'm dreaming, three, i'm dreaming' and so on, until you either find you ARE dreaming, or you've fallen asleep and woken up the next morning!
If you can do this with a friend it's excellent as it helps you to learn to recognise when you are dreaming.
Second thing i could suggest is this. If you don't recall anything during the night, don't stress out about it. it will come back. If you have the time, take an afternoon nap. It's a fact that you are more likely to fall into REM sleep in an afternoon nap than when you go to bed at night. You get there quicker for some reason.
I find relaxing music helps as well.
