1. Any sense can occur in a dream, the only reason people usually just notice sight and sound is because most of the time those are the only senses we're paying attention to, and except in unusually vivid dreams, it's rare for there to be much detail to the things we're not paying attention to. Since we can choose what we pay attention to in lucid dreams, tasting food in them is fairly easy.
2. Although lucid dreams tend to be more vivid, they aren't always that way. However, no matter how vivid your dreams are, the memories of them can still be fuzzy when you awaken, simply because dreams have a natural tendancy to fade. The best way to fix this is to work on dream recall through the use of a dream journal. If you write down your dreams when you wake up, they are recorded into your memory better, and in the process of writing them down, you tend to remember more of the details and events of your dreams, which otherwise would have been forgotten forever.
3. Having control over dream characters is definately possible, if you're lucid enough. Although it varies from person to person, if you are lucid enough to recognize and believe that dream characters are created by your mind, and thus should be under your control, you can usually get them to do whatever you ask of them. If you're talking about more direct control than just giving them orders, although it would be much harder, there's no reason I see why it wouldn't be possible, with enough dream control.
