Hi, and welcome to DV! I've only been here about a week, so all I'm doing is repeating the information I've read and heard from other members.
Dream recall can take any amount of time to develop. If you've only been at it two nights, you simply just need to keep going. Start a dream journal in the Dream Journals thread. Just writing down what you remember each morning will usually yield good results, but it could take time to improve your memory. Some people instantly remember multiple dreams per night, others start off not remembering anything for several nights in a row. The whole point of dream recall is twofold: First, by remembering your dreams, you can begin to distinguish "dream signs," or certain people, objects, or themes that show up in a good number of your dreams. Later, when you know what your dream signs are, you will have something to watch for that might signal that you are in a dream, and you can (hopefully) learn to become lucid when that happens. The second purpose of dream recall is more fun: To remember your lucid dreams! (What good is an LD that you can't remember?)
At this point, I've had a couple of nights where I hardly remember a thing from my dreams, but other nights I've recalled three or more, and at least one vividly. I'd say you're actually on a good pace.
Regarding your question about knowing you're in a dream, again, most people will benefit from learning their dream signs. If you often dream about people chasing you, they might not seem strange in your dream, but eventually you might be able to say, "wait, nobody chases me in waking life, I might/must be dreaming!" That said, I have had four lucid dreams so far, and each time I just suddenly became aware that I was dreaming, and went from there.
Your personal experiences will be much more valid than other peoples' suggestions, but start off with the common techniques and find out what works and what doesn't. Practice and discipline will get you farther than anything else, but you should also read the main DV homepage, check out the Tutorials forum, and generally just poke around to see what the community is saying.
