I'm the same, I try to never close my eyes in a dream because usually when I open them, I am back in the real world. Make sure whenever this happens though that you do a reality check, but you may actually be in a false awakening!
Changing dreamscapes and summoning people and objects relies mainly on CONFIDENCE. As long as you are 100% sure that something is going to work when you do it, it will work. So there are literally infinite possibilities to changing environments, summoning objects, and summoning people! No matter what you do, just remember that it is a dream, and be sure of yourself, and it should work.
Anyway here are some common ways that people change dreamscenes:
Open a door and expect the new scene to be on the other side.
Magnetic Method: not sure who came up with this one, I have never used it but basically you imagine that your destination is a magnet, and that it is pulling you toward it. So you sort of end up flying and being there.
Climb into a poster or photograph, just expect the poster of where you want to be to be on the wall!
Climb into a mirror (same as ^)
TV: change channels until you see the scene you like, then climb right in!

Summoning:

Open a door, expect the person/object to be on the other side (I've never done this, but if I ever do I'm going to go DING-DONG! first so that I'm sure someone is on the other side ringing a doorbell...)
Reach into your pocket, expecting the thing you want to be in there. Remember, even huge items can fit into dream pockets!
Expect the person to be behind you, or tapping you on the shoulder
