We do use 100% of our brains, however the issue is more complicated. First off we adapt to the environment, rats for example have more neurons if they are in a rich environment. It also depends how you treat your brain, if you are lazy then your brain rots away. |

On average, we only use 10% of our brain at a time, not total. As far as I know, there are not "parts" of the brain that are "unused". Its just that we don't use all of those parts simultaneously. And as already said, a lot of the brain is designated to regulating all of the involuntary functions of the body (there are tons of these). |
