The purpose of a dream journal is to help people remember their dreams, and to help people find recurring aspects in their dreams which they can use to become lucid. If writing down one or two dreams a night is enough for you to keep your dream recall sharp, you have no need to write more. If you want to be really thorough in looking for patterns in your dreams, however, it might be beneficial for you to write down more.

Keep in mind, though, that searching for dream signs is only one method for inducing lucid dreams. Different methods work best for different people, so I would recommend that you read tutorials and experiment with the commonly used techniques (MILD, WILD, Awareness, WBTB), then find what works best for you.
