Hello, Matt! Welcome to DV! I'll try to answer some of your questions.
1. The amount of control you have really varies due to the level of lucidity and also personal experience. Obviously, the more you've been lucid and had the opportunity to do what you want in a dream, the more you'll be able to choose what you want to do and do it. Movement (ie. walking, moving arms, etc.) is normal so you don't have to worry or think about it. When you start trying to fly and the like, then you're working more with your own will.
2. No. You are still in a normal dream and nothing really changes.
3. Check out the tutorials first. They're a great reference point and you can look through and see which ones might work well for you. However, I (and everyone else here) would like to encourage you to get a dream journal so when you wake up in the morning you can write down your dreams from that night. It will help you build your dream recall (how well you remember them), and also can help you look for dream signs that regularly appear so that when you see them again you'll know you're dreaming.
