You mean you can remember one dream every night?
Well it is not so bad, remembering one dream a night is OK.
Anyway we all have periods in which our recall ability ( and lucidity ) is better or worse, just keep trying until it improves.
Also maybe your initial enthusiasm has been reduced. You have to face it that training for better recall and for LD is a long process, and you have to try to sustain your motivation. Try different things, and change things to keep the effort fresh, for example try using auto- suggestion techniques before you go to sleep, try to use an alarm clock at night to wake you up and if it wakes you up during a dream write it down, try maybe CD's of self-hypnosis and subliminal messages or brain wave entrainment programs.
So try to keep the effort fresh and interesting by trying different approaches along with the basic approach of keeping a dream journal.
And most importantly as I said be patient, your progress is gradual and sometimes it will look like you are regressing, but if you keep practicing consistently you will eventually improve.

Ok, its obvious that you are a bit worried about losing all the effort you put all this, first off you need to calm down and realise for a start that dream recall can fluctuate alot, you can remember 5 dreams on one day and 1 on another. For example, i went on holiday and my recall improved alot, i came back and last night i remembered one dream, thats true but it doesn't annoy me, i know that i am able to remember 5 or more dreams and i know that remembering less than 5 isn't a problem because it ws probably just an odd night out, i see it that way, whats happened to you is that you had an odd day out in which you didn't remember much and you got a little annoyed over it, this stress unfortunately can ruin your recall because it can make a problem out of nothing. When you go to bed the following night you may think "i hope i don't remember just one dream again" and that sort of attitude will only lead to results such as remembering one or two dreams, maybe even no dreams.

Think positively about the situation, think to yourself "i only remember one dream today, cool, i don't have to write much down in my journal" or you could say to yourself "cool, i remembered a dream, better than remembering nothing". If you feel so annoyed about remembering one dream then when you come to write it in your journal try writing as many details as possible, this fills up a bit of space and you'd be surprised how much you can remember if you put your mind to it, you may even remember some more dreams in the process!

Don't get stressed or worried, just keep calm and be positive about the situation and things will get better, trust me!
