      I LOVE omelettes. I was taught to make them by a real omelette chef.

      He suggested I practice flipping using a slice of bread. It was a great suggestion - saved much heartache in lost eggs and cleaning of floors.

      I still cant cook anything besides grilling stuff, and scrambled eggs. I tried makin an omelette once and it turned out weird. Think I didn't use enough Pam spray...

      Nice!! I had an idea of how to make them, but then I looked up some directions on google and found a youtube video to walk me through it. I'm good with a grill, but I'm just now getting into learning how to cook different things on the stove. The Internet is a wonderful thing. Haha.

      And I had a little trouble with completely sealing the omelette, but I did a pretty good job with folding it up, for my first time.

      I never worried about "sealing" them. The best ones, IMHO, have so much stuff in 'em that they can't be sealed anyway.

      I scramble the eggs, then pour them into an omelette pan already containing about a tablespoon of hot olive oil. As the thing starts cooking (slower is better), I use a bamboo tool and pull the sides into the middle, letting the liquid keep getting underneath. By doing this, you'll end up with an INCREDIBLY fluffy omelette without resorting to actually whipping the eggs. When there's just a little liquid left on top, I flip it.

      Then in goes a dash of some kind of sauce, (one of my favorites with eggs is Dave's Insanity Peach, believe it or not,) and add the sautee'd contents to the half that is going to hit the plate first. (Now is the time to season too - just a touch of salt and some fresh-ground pepper, if your sautee' doesn't include these already.) If topped with cheese, I then cover the pan just long enough to melt the cheese.

      Then slide it half-way out onto your warmed plate, flip the other half right up over the top and serve the puppy.

      That's how I was taught to do it. The hardest bit is simply learning to flip the buggers. After that it is a matter of getting the heat right so the eggs don't cook too fast and get tough.

      Yeah, I whipped my eggs. I will have to give your method a try. I can see how flipping them could be a problem, as wide as they can be. I cooked them perfectly, though (on low-medium heat). I was afraid I might cook them too quickly, but it came out perfect.

      I had the best omelette I ever tasted somewhere in Paris a few years ago. Hmm, must go have a hard boiled egg now, which I love too.

      Allright, everybody needs to know this now.. the secret ingredient in the best omelette in the whole wide world is... *insert drumroll here* CHIVES!

      I'm telling you, chives make a good omelette into a GREAT omelette.

      Also, broiling it before "the flip" makes it really fluffy.

      2 tips for the price of one. Enjoy!

      I love hard boiled eggs, too. Deviled eggs are the absolute best, though. And yeah, we need to have that DV potluck sometime soon. I’ve got a crazy pasta salad recipe that I’m just dying to get everybody hooked on.

      Ooooh.. if you get a chance (and eat pork) try adding spanish chorizo with some salsa on the side!

      Spanish chorizo for those who don't know is made from coarsely chopped fatty pork and usually seasoned with chili, paprika and garlic. The mild Spanish paprika used gives this sausage its characteristic flavour. The Chorizo itself can be found as either picante (hot) or dulce (sweet).

      Why vegetarian Xox? just curious...I don't think I could live as a vegetarian..I know there are substitutes but I still wouldn't feel like I'd get enough protein.

      If you're up for it and truly want it too, go for it...there are many ways to manage and the culture does cater to veggis.

      What's the point of being a vegetarian? It's not as healthy, and you're still eating living things or w/e your conceren is. Plus, humans were designed to eat meat and vegies...
