I have alot of computers and need a centralized storage/backup solution. preferably cheap and easy. thinking some type of NAS or simply a spare windows comp with shared folders. Which do you guys think is better

Yeah I have the same thing. Windows shared folders is dead simple, and it's pretty handy too. I have all my stuff on one computer with a big hard drive, and select folders are shared across the network. It works perfectly, and it's pretty fast too. I don't really notice much of a speed difference between that and a local harddrive.

There's also network RAID arrays out there, though their customizability/upgradability is limited.

Consider that thirded, actually. RAID is probably your best bet if you're serious, but if you want a cheap "I don't really care that much" backup system, then you could possibly get by with rsync. Windows Folder Sharing? It's lovely, but, frankly, utterly useless as a robust backup solution.
