When I want something, I usually just say to myself, "Behind that door is _______." Then I go through the door. What I actually find may be somewhat different than I expected, (I once summoned Jessica Alba this way, and she was there, but turned into a vampire), but it's usually in essence what I wanted. Actually, it's kind of a benefit for the dream to take what you wish for and give it its own twist. Usually. The vampire thing was a let-down. I think it mostly depends on your level of lucidity how much what you get resembles what you wanted.
For small things, I would just say to myself, if there's a dresser nearby, "In that drawer is _____."
For an island, I would probably just get in a boat and say to myself, "Just over the horizon is my island." Then ride your boat there. You might want to do something more dramatic like raise your hands and have the island rise up from the water. I've never tried something like that, though I don't see why it wouldn't work if you expected it to.
To be a mermaid, go swimming and move your legs in tandem like a mermaid would, then think, "when I look back at my legs, I will have a fish tail."
For a ball of energy, I've never tried that, but just knowing it's a dream and expecting it to happen, like any of these things, will usually cause it to happen.
