In my experience, though, it has more to do with giving up. I notice even in waking life that I resign myself to things going wrong all too easily, and the plane crash dream seems to echo this. After all it's the dreamer's plane and it's the dreamer that's crashing it. It's like I know it's going to crash and sure enough it does.
Maybe that's why flight sim games are so popular, and why we get frustrated about failing to land our plane safely.
