When you see someone for the first time, you might not have a vivid image of what they look like the next day, but your brain will have sub-consciously taken in what they looked like, and stored it somewhere. In a normal dream, your brain will use that image that it stored away as the one that you see, and it will be a perfect replica. So although you might not be able to think about someone during the day, you can see them perfectly in a dream.
