      What's for dinner?

      For the handful here old enough to cook for ourselves, I thought I'd start this thread, inspired of course by dinner tonight.

      I did a stir-fry of veggies from City Fresh, the local Community Supported Agriculture program. I chopped a cubano pepper (medium hot) and two chinese eggplant, diced a small beet, and stemmed three handfuls of green beans, heated the wok on med-high with a couple Tbsp of canola and a Tbsp of sesame oil, then started w/ the green beans, seasoning w/ fennel powder and a bit of cayenne. As the beans were softening, I moved them to the margin of the wok and added the rest of the veggies to the middle. I hit the eggplant w/ some ume vinegar, then when they softened up I hit the whole thing w/ sea salt, stirred it all together, added a bit of cider vinegar, soymilk and chili powder, and cooked another five minutes.

      Just before I'd heated the pan, I started the rice-cooker going, so once it was done I scooped it over rice on a pretty plate and manged joyously.

      I kinda did the same thing, rice and veggies, but not nearly as beautifully as yours sounds. Actually, it's left over from yesterday and I'm gonna have some 5 day old vegan tofu tomato chowder something or other soup to go with it. And I had a bag of popcorn to start. Mmmm.....dinner.

      Heh, I don't make a point of cooking vegan, but I get plenty of eggs and dairy at work and rarely have meat around the house, plus I mostly learned to cook while I was working w/ a master vegan chef, so both my kitchen and my palate are adapted to it.

      I'm planning a pigs-and-fish run tomorrow while I'm off work, though for me cooking meat is still fairly experimental. I did a killer sausage stir-fry a couple weeks ago, but it's hard to screw up stir-fry.

      I had 2 garlic and herb pitta breads stuffed with white crab meat, mixed lettuce leaves and red onion, with a teeny bit of mayo, an Orange and raspberry smoothie ( home made) on lots of ice, and a weightwatchers mixed berry layered yogurt for dessert.

      Tonight is looking like stir-fry again: pan-seared scallops with stir-fry cabbage and green beans. I might do a red curry rub on the scallops, and definitely some fresh basil in there.

      More or less what I said, but no basil, I finished the scallops in the oven, and I deglazed the veggies w/ mixture of cider vinegar, soy sauce, salt and cayenne.

      A homemade beef stew that puts Dinty Moore to shame.
      Tender beef, chunks of carrots, potatos, mushrooms, and onions simmered on low heat for an hour and spiced with S&P, thyme, a bay leaf and some beef stock.

      Heh, there have been several dinners involving chorizo since the last post, but I just finished up a tasty bacon stir-fry of green beans, beets, greens, corn and green peppers on corn tortillas. I heated the tortillas in the dry wok, set them aside in a covered dish, did 3 slices of bacon (two would have been plenty), set those aside on paper towels, drained a lot of the grease into my stovetop goo jar, then dropped in the beets and green beans, let those go, next the greens and green peppers, then last the corn (cut off the cob). I deglazed w/ the same mix a few posts up (dash of cayenne, one part soy sauce, two parts vinegar), crumbled in the bacon, threw it all on a plate w/ the tortillas and manged down. Red wine probably would have been better for a deglaze, but I can't complain

      I just had hot wings, cause the movie rental place is in a Fox's Pizza Den, and I decided I wanted hot wings more than I wanted pizza while I was renting six movies to veg on.

      Actually, I pulled a fast one; I rented myself three movies and my mom three movies, and she paid for my supper. I figure that's a decent enough deal.

      Maybe tomorrow night I'll cook Mongolian chicken.

      I made the kids some sauteed onions, garlic , tomato thrown ontop of some brocolli. They had soccer practice, today, so it ha to be something quick. They did have some homemade graham crackers with peanut butter and almonds, afterwards.

      i used a recipe out of an old american cookbook i found for scalloped potatoes.don't ask why i needed a recipe for those...i like mine. i put cheddar,cut up lunch meat ham and lots of onion in them.i could live off potatoes...

      Last night I had four pieces of toast with Promite on it. I was at home by myself last night and Josie was getting belly aches so it was the only thing I could eat without being in the kitchen for 20 minutes..
