Let me introduce you to the Null Hypothesis.

When something has a lack of evidence to show for its existence or fails to show an intended effect repeatedly, it is presumed to be false. This goes for:

Mermaids.
Leprechauns.
Pixies.
Homoeopathy.
etc.

Atheists simply take that one step further and apply it to God. So far, no evidence, therefore presumed to be false. If it turned out he/she/it did exist and proof did arise, then most likely, Atheists and Agnostics would not only acknowledge God's existence, but would be the best prepared for understanding God, as they have no preconceptions on what God is, unlike with let's say Christians or Hindus, etc. They would be able to work from a clean slate.
