It's probably best to stick to memorization-style learning, such as reciting lines or studying. The problem with practicing things like piano or the saxophone is that dreams can't really produce an exact copy of things - including objects, people, and locations. The saxophone you may be holding in an LD could be larger than normal, or smaller, but will most likely have too many (or little) keys on it. Or whatever they're called. Not to mention you'll probably hear what you're expecting to hear (dream control is based essentially on expectations), so even if you somehow press the "wrong" note, you'll hear the right one.
Creativity-wise, though, it would definitely benefit you! I once played a harmonica in an LD and got some interesting notes and melodies from it.
