Sure, I recommend whatever position is more comfortable for you. More people have had success on their back but if you are not comfortable doing that then don't.

Counting your breaths would be fine. Basically as long as you stay aware enough that you don't fall asleep but not so aware that it keep you up. As long as counting your breaths doesn't keep you too awake, it should be fine .

It doesn't really matter. Whatever one you are more comfortable with. If your mouth distracts you, switch to nose.
