Perhaps I should explain a little better. In order to have movement, you have to be moving relative to something else. So if you fly really fast at low altitudes, everything is a blur, and you can't sustain your surroundings.
Flying slow at high altitudes, everything is so far away that you begin to lose that feeling of movement. Flying at the speed of light is impossible in dreams because everything around you blurs out of existence, you no longer have anything to move relative to, and you lose the feeling of movement.
As for the standing/sitting thing, it really has to do with you being used to moving around while standing, or traveling in a car while sitting. If you try to stretch out like super man, the most common associations with that position are with swimming, so people often default to swimming physics.
