Sure thing, Rageheart. Xanous has the most expertise in playing with caffeine, but let me tell you what I know.
First, the bad news. Caffeine does appear to interfere with sleep. Most importantly, REM sleep (the richest area for dreaming) seems to be decreased in caffeine drinkers. Here's one example of a small study that looked into this : Caffeine Cuts into Sleep, Even Hours Later | LiveScience
So there may be something to what you're experiencing. One thing to consider is perhaps pushing your coffee drinking to the early morning hours so give it the smallest possible chance to affect that night's sleep. If you think that you can break away from caffeine entirely, that could be even better.
There's some good news about caffeine, though: clever, judicious use of caffeine can actually help with lucid dreaming, although this is pretty advanced stuff. Xanous has induced a large number of lucid dreams by having a small amount of caffeine (perhaps half a cup of coffee) at his wake-back-to-bed. Like I said, though, this is advanced work, and probably best saved for later in your practice.
