It's good to see your having lucid dreams already. A word of advice if you don't mind, since you said you wanted to learn more about dreams.
Usually it's better to not take dreams seriously, symbolism is much less than pronounced than what some people like to say (especially online). In fact the scientific community have struggled for over a century to remove the concept of Freudian dream analysis, because all evidence points against it.
Dreams as you know are largely experienced in an unconscious state, the common theme between dreams is a lack of reasoning, seemingly random events and also sometimes events from previous days. When taking into account that pretty much 90%+ of all dreams follow these patterns it becomes quiet natural to assume that literally any situation can pop up in a dream.
For instance in your case, in your love dream it's most likely you didn't even know you had a girlfriend already, add to that a lack of control and heightened emotions. It's actually a very natural thing to occur. Another possibility is that you were reflecting your love for your girlfriend in the dream. Chances are that your dream took mild influences from your life and composed a love dream out of it, more likely anyways than that your brain is trying to tell you something
I've had love dream many times, but I choose to enjoy them. They feel great, it's unfortunate that it ends but it's the memory that counts. That's what makes dream so awesome, they're pretty much unpredictable, every night is a new adventure
