I'd try just easing into it. Start off going with the flow, then try to gently take control. That's about the only bit of advice I can really offer. Like ninja said, more control comes with experience. You may have to retrain your brain, as maybe the techniques used as a kid have lost effectiveness.
It may also be possible that you rush into a dream too quickly, which can lead to over-excitement and cause you to wake up. Also keep in mind that the real world impacts the dream one. Stress, worry, etc. all affect your dreams.
