Greek Chicken Pita (it's actually ridiculously healthy):



recipe:

whole wheat pita
baked chicken breast, diced
low-fat plain yogurt (try to keep it around 1-2% milkfat .. non-fat will just taste awful in this recipe)
diced red onion
diced cucumber
diced tomatoes
minced garlic
chopped dill
mixed salad greens
salt and pepper

Toast the pita for a minute. Mix everything else up up in a bowl and stuff it into the pita. I didn't list amounts because you can kinda just eyeball it to your taste. It's all good for you. And tastes awesome. Perfect for lunch if you're on a diet, or even if you're not. Add some feta cheese (and BACON) if you want to be a little naughty and add more flavor You can also substitute lamb for chicken to make it taste extra Greek And by the way, if you make a big bowl of the filling, it gets even better and better as it sits a few days.

Perfect Roast Chicken:



I know it looks like a plain and simple chicken, but.. I insist on this recipe, for its freshness, simplicity, and ridiculously heavenly aroma. Your neighbors will be able to smell the beautifully basting bird as they pull up into their driveways, and wish that the sweetly succulent scent was coming from THEIR HOME

Recipe:

A 5-pound or so chicken (preferably all natural or organic. You can get all natural from Sprouts on sale for less than 5 bucks)
A lemon sliced into about 4 or 5 thick slices (meyer if you can afford it, the aroma from a meyer lemon is BONKERS good)
1 garlic head sliced in half (the whole bulb, with many cloves) example
Many sprigs of FRESH thyme
1 tablespoon of butter, melted
salt (no pepper, it prevents the skin from making a nice, crispy crust.. add pepper after)

Pre-heat oven to 425 degrees F
Tuck the wings under so they don't burn
Stuff the inside of the bird with the slices of lemon, garlic, and thyme
Brush the skin of the chicken all over with the melted butter
Sprinkle with salt
Don't tie the legs, that prevents the thighs from cooking properly
Place the prepared bird in a properly fitting oven-proof dish, legs first, in the oven
Bake for 1 and a half hours (or around 1 hour for a 3-4 pound bird)
Pull that fucker out and LET REST FOR 20 MINUTES BEFORE CUTTING OR SLICING (otherwise, juices will escape, resulting in dry meat)

Note: if you want to add vegetables to roast with the bird, just cut up your favorites: carrots, onions, potatoes, parsnips, mushrooms, fennel, and place them under a rack, under the chicken in the baking dish. They will soak up all the chicken drippings, and become a wonderfully delicious side dish to your perfectly roasted chicken.

PS. you can eat the skin right when she comes out. It's like chicken-bacon. << I drools >>
