Not so much a war as conflict with the settled Mexicans, who put up resistance in the form of guerrillos.
The biggest battle of the period was undoubtedly that of Camarón, in 1863. It's still a big part of French tradition in the form of Camerone Day. Heroic stand of the Foreign Legion and the like.

Essentially their Mexican campaign was the point at which the French Foreign Legion attained the legendary status it has today for being a harshly-disciplined unit in which men go to escape their old lives.
