It doesn't matter though breathing through your nose is less likely to dry your throat and may make it easier to fall back to sleep.

i read the technique, but how do you know if you are at the end of an REM cycle or not? it says if you have just finished an REM cycle it won't work. I frequently wake up in the night after dreaming, usually 4-5 times, and I can recall the dreams, but how will I know if these are at the ends of REM cycles or in the middle?

By trying, During the night you have around 15 micro awakenings to check if you are properly breathing, Some people wake up naturally at these times, therfore it could be completely random. Even if it was the end of a rem cycle it shouldn't matter too much.
Basically Deild is based on the fact that when we wake up our mind is still getting out of rem state of mind, by Deilding you are reinducing the lucid rem state while it is still easy to access. Therefore even if you woke up at the end of a rem cycle you can just continue it.
