      Cheese Louise

I love cheese? Don't you? All of you cheese haters get out, now! Please?

What do you love about cheese? I love its sharpness as I love aged cheddar. OMG it exhibits much flavor when you buy it from a cheese store. Those of you who have never had authentic Wisconsin cheese don't know the half of it.

      CHeese is the shit

Casu marzu (also called casu modde, casu cundhídu, or in Italian formaggio marcio) is a traditional Sardinian sheep milk cheese, notable for being riddled with live insect larvae. Although outlawed in the European Union for health reasons, it is found mainly in Sardinia, Italy on the black market. Casu marzu literally means "rotten cheese" in Sardinian, and the cheese is known colloquially as maggot cheese.

Casu marzu is considered toxic when the maggots in the cheese have died. Because of this, only cheese in which the maggots are still alive is eaten. When the cheese has fermented enough, it is cut into thin strips and spread on moistened Sardinian flatbread (pane carasau), to be served with a strong red wine.[6][7] Casu marzu is believed to be an aphrodisiac by local Sardinians.[2] Because the larvae in the cheese can launch themselves for distances up to 15 centimetres (6 in) when disturbed,[1][8] diners hold their hands above the sandwich to prevent the maggots from leaping into their eyes.[4] Those who do not wish to eat live maggots place the cheese in a sealed paper bag. The maggots, starved for oxygen, writhe and jump in the bag, creating a "pitter-patter" sound. When the sounds subside, the maggots are dead and the cheese can be eaten.[9]

All cheese is good, from humble cheddar, to stringy mozzarella, to the tangy pepperjack, to the salty cream cheese...it's all good. Smoke it for awesomeness, age it for brilliance.

Until I saw this thread, I thought I was the only one who felt this way about cheese. I worship the cheese trinity of the Gouddha, and Cheesus Mice, and the Holey Swiss. End lactose intolerance now!

Has anyone here ever tasted moldy cheese on accident?
      I have.

      It's horrible!

A couple of years ago, I saw a gross white spot on some cheese. I asked my dad about it, and he decided to cut that part off. The rest looked completly fine. So, I tasted it, and it was so completly gross. I guess that though the mold there wasn't obvious, it infected the whole cheese!

So, next time you see a hunk of gross white mold on your cheese, don't bother trying it.

EVEN BETTER, tell someone to try it who is nearby, ask them if they want a slice, don't tell them about the mold that you found on it. Then, if they act pleased, then it's all good, pig out! But if they cringe at first bite, throw it away!

My favorite cheese is the good old Cheddar. Great either sliced up and eaten by itself, melted on a tortilla, whatever... I HATE those Kraft American cheese slices with a PASSION. They are so gross.....

Once I see even one spot of mold on a cheese, I can't eat it. That's damaged goods.

The american cheese slices aren't bad if you make them into a grilled cheese sandwich, or throw them into an omelet.

Does anyone here ever have cheese curds?

      I love 'um!

I dunno, maybe it's a wisconsin thing, but they are so good! At Culvers, you can buy fried cheese curds, I love them, SO MUCH!

You can also make your own fried cheese curds, with cheese curds (when they squeak is the best!) and flour and some spices. SO GOOD! I am hungry .

I don't like those awfully aged chesses you people post. But I'll eat some Jarlsberg or Gauda any day. Or some good and propper brunost.
In fact... I think I'll go have a slice of bread and a bite of cheese right now.
