That's normal when you start out. With practice you'll remember more and more of your dreams, first maybe snippets and then you'll get better. Recall of dreams is a trainable skill, it rarely appears out of nowhere
As for falling asleep, just do it. I'm sorry I can't explain myself better than that, but everyone has slept many times in their lives so there is no way you don't know how to do it...just don't try to do it, because as we all know when you try to fall asleep sleep doesn't want to come. I'd say just do whatever you want to do before falling asleep like mantras or visualisations or whatever, and then forget about them and just go to sleep. Seems to work for me at least
