Yep, you can control them.

I remember 'Hacking' the mind of a DC way back when I first started and forcing him to eat a loaf of bread. Might not work on dream guides, but should work on most anybody else.

Yes, it's totally doable!
Not all DCs are the same - some are plain and have very simple "personalities", others (like dream guides) can get very complex, up to the level of actual people in complexity. It's easier to control the plain DCs. A fun thing I once did is "getting" the "superpower" of telepathy (including pushing ideas, etc.). It's pretty amazing to experience reading minds of others and making them do stuff (yes, of course it's just simulated, but feels just as real as you'd expect). Some DCs were less vulnerable to this "power" than others - main cast were affected the least while side characters were the easiest to manipulate.

You can definitely control DC's. In fact, you are already controlling all of your DC's with your expectations.
So, if you can control your expectations (what you expect them to do), then you can effectively control your DC's!
Now what I find interesting is applying that to waking life as well. Maybe you won't be able to control people outright, but the way that you perceive people and the world around you will definitely change, and that change can be quite drastic!
