1. Is it correct that out of the 5 senses you have, sight is by far the most dominant in dreams, followed by touch/sound, then smell, and finally taste being the least? And if so, is it true that if I were to do something to try to heighten one of my senses, such as listen to music or concentrate on smell more often or consume more vitamin B6 (going off on a limb here ) would it work?
It varies on person, but by popularity, yes. For me it's 1. Sight and sound 2. Touch 3. Smell and Taste. Things tend to become more sensual in a dream if you focus on it, it also makes me stabilise in the dream. I wouldn't recommend taking 'more' B6, but it does increase recall usually, but the amount/how often you should take varies on opinion. For me it's 200mg max.
2. Is this RC affecting my ears? Whenever I do the RC where you plug your nose and try to breath in and out, I think that it's adjusting... something in my ears, affecting my hearing!! Now I can't hear as well out of my left ear, and when I hear something high pitched, there is another, differently high pitched sound in that ear! I'm not positive this is caused from that RC, but it has happened in the past where I plugged my nose and breathed hard and my ears went wonky...
I think this is just classic dream behaviour, don't worry about it, if you don't way attention to it then it will go away. That is if you are talking about a dream! 
3. I might be getting a job that requires me to work overnight, and into the morning. Will this affect my dream lucidity positively, negatively, or at all?
Depends, if it messes up your sleep cycle, it might be hard to perform WBTB, but then again it could have a positive effect suppressing your REM, which can lead to large dreams, lucid or non lucid. (More REM in one sleep)
