Your Reality Checks will become more and more frequent the more you remember to do them. A tip I would give is to try and keep the idea of lucid dreaming in the back of your mind all day, so that when you notice anything strange occurring you can think, "Wait, this might be a dream!" and carry out a Reality Check. Another method which I personally use is setting up a note and image on my phone that will make me question reality. It acts as a way to make me remember to Reality Check, and also a way to bring dreaming back into the forefront of my mind and it makes me think about it more through the day.
Here's a screenshot of my phone's lockscreen:

It seems you're having trouble with getting recall up in the first place.
To help with this, use a dream journal if you don't already, and when you wake up in the morning give yourself a couple of minutes and just sit and think through your dream in reverse, as if you're reliving it from end to beginning to help you remember details. If you can't remember any dreams at all then still sit still for a few minutes and see if anything comes to you. Wrack your brains for anything. Literally the smallest of things, be it a word, an emotion, or an idea. What this does is place importance on your dreams. Otherwise your brain counts them as unimportant data and it will be wiped pretty darn quickly from your memory. So practice recall and get your recall up to scratch before trying to incorporate mantras into giving yourself more dream recall.
Now onto mantras. As I've said, you should focus on recalling more dreams in the first stages of practicing lucid dreaming before you try and move on. I'd say 1-2 dreams is a good aim for a beginner, if not 2-3. The more, the better! You could use a mantra to help you remember your dreams. The one I use often when I'm having trouble with recall is, "I wake up and remember my dreams." It always helps, and you will probably see good results from it within a few days, if not even just one!
Once you have your recall up to a decent regular standard, then start using mantras to help you become lucid. Continue to practice your Reality Checks while you are gaining more recall, as you really want to enforce that habit into your subconscious. It's hard not to become demoralized when you don't see any progress happening, I know, I've been there. What you have to remember is that even when you don't see the progress, it's still happening. For example, every day that you perform Reality Checks throughout the day, every night that you recall dreams, every time you focus on lucid dreaming and think about it, it's all progress. It's all reinforcing the idea into your head that lucid dreaming is something you want to achieve, and that dreams have importance.
Patience is a key virtue when it comes to lucid dreaming, and you want the experience to last as long as possible with as much motivation as possible. The way to do this is to first gain recall, then aim for a lucid dream after that. This can be a long journey, or it can be a short one. Either way, stick it out, and have fun! Good luck!
