To me, it makes sense that the environments of my dreams would change or alter even in small ways constantly, because in waking life the overall environmental context is fixed based on where I'm physically located, so the associated chain of thoughts while awake will vary around the environment I'm in and based on what else is happening in the environment (interactions, etc.).
This is only my hypothesis based on my own experience. In a way, because dreaming creates its own environmental contexts, it makes sense to me that thought processes beneath the threshold of conscious awareness can/do alter the dream itself without my conscious knowledge that it is about to happen; it would essentially be a self-perpetuating process and I'd say it can reflect how my conscious thoughts work while awake too, as it's very difficult for me to hold on to a specific thought for very long (more than a few minutes at best) without the use of specific memory aids or unless it is of great importance, but even then...
And as Tiktaalik said, I would also suspect most peoples' dreams will vary and change with some frequency.
In any case, my lucid dreams still follow the same logic of flow as non-lucids for the most part. I think the biggest difference between the two tends to be that my perception of the passage of time is a bit more "present" if I'm lucid.
